Using nature to inspire learning

One of the most exciting things about homeschooling, is the ability to create environments which inspire learning in our children. They have so much fun – they don’t even realize how much they are learning. These experiences can even lead to much deeper learning during a more structured “sit down” school time, if need be.

Most likely, no matter where you live, you’ll be able to find parks, ponds, lakes, beaches, woods, or rivers where you can explore the beauty of God’s creation and use nature to inspire learning.

It’s important to share your excitement and interest in nature and to introduce the idea of “exploring” early on. You don’t have to be an outdoor enthusiast, or an expert outdoorsman in order to effectively help your kids learn about wildlife. All it takes is a desire on your part and an enthusiastic attitude. Your excitement will be contagious and your parental bonds will be strengthened as you begin to slow down and simply take a closer look around you.

You don’t need expensive tools or equipment to do this, or exotic locations either. You can generate an intense desire to learn while viewing deer grazing in a field, dolphins jumping in the water, or by finding an apple snail. Large or small – all creatures in God’s creation are wonderful.

Studying wildlife and nature can mean both plants and animals and any of them can inspire your children to have a desire to learn more. When was the last time you slowed down during an outdoor family walk to take a close and careful look at the petals of a wildflower? Have you stopped in your tracks to listen together at the hoot of an owl?

You can inspire learning as easily as doing this type of thing, and then following it by looking up the animal or plant in a field or nature journal. Identify it, and read more about it. Discuss the habitat it lives in and the area where it was spotted. Was it in it’s natural habitat at the time or had it traveled away from it’s home territory? Make note of these things in simple nature journals  – notebooks or binders.  Ask questions – you don’t need to know all the answers! Part of the fun is finding out theses things – together.

Use thought provoking statements such as “I wonder if it is large for it’s species or average in size” or something like “Why do you think it needs large claws like that?” to induce further discussion with the family.

Add another layer of depth to your studies by using museums and library services for further exploration. Teach your children to look up the information for themselves as it becomes age appropriate.  The more often your family takes part in this type of learning together, the quicker you will hit your stride and find out more about what works best for your crew.

Stocking Up – Make Your Own Stock

Did you know most store bought broth (chicken, veggie, etc…) contains gluten? A few brands don’t, but rather than taking the chance – and spending the money – I just make my own stock. The flavor is much better and richer, and it is so easy!

 

How to Make Your Own Stock

 

Any critter with bones can be used to make stock, but I use whatever we’ve eaten recently. We froze the ham bone from Easter and I’ve used that for this batch.

It is so easy! The hardest part is that you have to be home all day, which for most of us homeschoolers is rare! (One of my friends calls it “car schooling” because we spend so much time running the roads!)

I have a pretty small stockpot. I want to get a much bigger one, but any deep pot will work. As you can see in the picture, mine has a drop in strainer. I don’t always use this, but it makes it easier to strain out the bones once they’ve given up all their goodness. I also have a metal tea bag in which I put the larger herbage – in this case, two bay leaves and half a cinnamon stick. When I am using a turkey or chicken carcass, I use sage and bay. You can use whatever spices and herbs you prefer…the only caveat being to be careful with salt. You are reducing this down and if you add salt in the beginning, it will be too salty at the end when the water has evaporated.

Add as much water as you can fit in the pot. Cover with a lid that has a steam hole or leave an opening for steam to escape – you want this to reduce. Simmer – don’t boil! – for 6-8 hours. The longer it simmers, the richer and thicker your stock will be.

When you’re done, cut the heat and let it come to room temperature. I usually start my stock first thing in the morning and cut if off at dinner time. Once it is room temperature, or at least cool enough to work with safely, strain it. I use a rice washing strainer that has tiny little holes to catch all of the pieces and chunks that bits of spices. I typically strain it at least twice. Running it through a cheesecloth covered colander also works well.

When you have the liquid strained, you then have to remove the excess fat from the liquid. Fat congeals and rises to the top when the liquid is cooled, so we can let plastic wrap do this job for us. Cover the stock with plastic wrap, laying the wrap touching on top of the stock. Then put another layer over to cover the pot. In the morning, when the stock is completely cooled, the fat will be stuck to the first layer of plastic wrap.

*Chicken fat is called “smaltz”, and is prized by chefs for its flavor. It can be used anywhere you would use butter or bacon fat. I throw it away because honestly, I’ve got enough fat of my own.*

The stock, when cold, should be jiggly like Jello. This is the gelatin from the bones that you simmered out all day before, and this is what gives stock that wonderful, rich, umame feeling in your mouth.

I store my stock in the freezer in two cup baggies. I fill the zip top bag with two cups of stock, squeeze out the air, and lay it flat in a baking pan. I typically get 6 bags out of a batch of stock (12 cups). Once the baggies are frozen, they are easy to stack and store because they are flat rectangles. I use a lot of stock so I don’t bother to date them, but if you don’t use it often you’ll want to put the type of stock it is and the date you froze it on the bag. It will last up to a year frozen.

You can also freeze the stock in ice cube trays and then store the frozen cubes in baggies for when you only need a tiny bit, like to loosen up a thick sauce.

 Cost of home made stock = a couple pieces of plastic wrap and some zip top bags.

Cost of store bought chicken broth = up to $4/box (a box is about 2 cups).

 You can use any type of animals or vegetables to make stock. I put in whatever I have. If I have half an onion sitting around, or some celery or carrots, I’ll add those. You can make stock from fish or shellfish by using the bones or exoskeleton, but they don’t have to simmer as long.

What can you use your stock for? Anywhere you’d use water, basically. I like to use it for cooking rice, adding to a casserole to loosen up the sauce, and of course, soup.

I hope I’ve inspired you to make your own stock rather than spending money on an inferior – and possibly allergen contaminated – product from the supermarket. It might be a little work to strain it all out, but the result is definitely worth it!

How Is Grapevine Studies Different than Other Studies?

Most of us know that when you draw something that you’re learning about, it helps it to solidify in your brain, right?  That’s what’s different about Grapevine Studies!  They use stick figures to tell the story.  Better yet, they have your student draw these stick figures, helping them to remember every aspect of the story, giving them the ability to retell it, any time that they please.  It’s really cool!  Even my 5 year old daughter, who I wasn’t planning on including in this study was able to draw along.  She was napping while I was working on taking the photographs for this review, but when she joins us again, she’ll be soooo excited to see that they have traceable pages for each lesson as well.  (I’m excited about that, too…as the first time we did a Grapevine Studies Lesson, we did not have the traceables and it took FOREVER for her to complete a picture.  She was adorable though, as she kept plugging along.)

(To start, you must try to distract the busy 2 year old from stealing your papers!  Ha! ) 

Before You Start:  I start by looking over the Teacher’s Guide to familiarize myself with what I’ll be doing.  This only takes a few minutes.  Then, I print the first lesson I want to do with the children from the Student’s Guide.

Day 1:  Each lesson begins with a Timeline Overview.  We briefly discuss the big picture of what we’re going to be reading and quickly draw each individual scene out onto the timeline using our stick figures.  The Teacher’s manual gives you examples of how to draw them, making it easier to tell the different people you’re drawing.  This activity could take about 30 minutes and is recommended to do all by itself on the first day.

Day 2:  Begin Lesson 1 and begin reading directly from the Bible.  When you get to a certain point, you stop and draw what you just read.  You also discuss the harder words that are being read within the Bible.  For us, during the Resurrection study, we discussed what words like Passover, betray, servant, master, blessed, New Covenant, etc., all meant by looking them up in a Bible Dictionary.

Day 3:  Do the 2nd part of that lesson, doing the same thing as the day before.

Day 4:   The end of Lesson One.  At the end of that lesson, each child draws their favorite part of what they learned that week and they say & write out their memory verse for the day.

The Next Week:  You move on to Lesson 2 and repeat the above each week until you’re finished with your study.

We had done our last Grapevine Study lesson on the Birth of Jesus.  When I let them know that we were going to be doing The Resurrection this time, they were excited!  They loved the birth of Jesus study so much that they were chomping at the bit to do another one.  They have a blast with it! I’ve been putting them off because I’m about to have a baby and I don’t like to start new things when I’m so close to being due (Due on Saturday, March 15th!) then I realized how soon Easter is coming.  Resurrection Sunday is on April 20th, 2014.  We have just over a month to get this study done!  If we happen to go over, it’s OK, as they’ll be learning all the while.  While at church today, I realized another cool aspect of teaching with this method.  It’s going right along with what we’re learning in church!  If the kids are paying attention, they’ll draw lots of parallels!
